I'd rather say Start&End. But definitely not the middle!
I start each project with a great enthusiasm, set exaggerated goals and finish with a high level of euphoria!

When I have been without work for a few days I always find the start enjoyable, but if I’ve been working on a long project I’ll find that the end of the job comes as a relief…

Depends on the project, but I have never been sorry that a project was over.

Depends on the project, my mood, other projects I've had/have lined up, what else I have to do, all the context in fact. I also enjoy invoicing projects - that's what brings the money in, after all

It depends on the type of document:
For a technical document, a contract, a procedure, something you can learn with, etc., both the beginning and the end are reasons for satisfaction, as well as the entire job, all the way through.
For accademic documents, human sciences, documents written by students and overseen by counselors (accademic), it's a torture all the way through. So completing it is a great satisfaction.
For documents in Chinglish, we may be illuded that it will be

For documents in Chinglish, we may be illuded that it will be a nice job up to the 5th line. Then it becomes a torture as well. But it's still a lot more challenging and pleasant than the second option above.
