burro nocciola
Il molke di solito è il siero del latte, ma in questo caso non lo tradurrei. Nussbutter è il burro nocciola, cioè il burro che si ottiene facendolo scaldare e lasciando evaporare l'acqua che contiene, finché cambia colore e diventa color nocciola, appunto.

Si chiama anche burro chiarificato, ma nella voce di un menù non lo metterei.
