Aşa dă Wikipedia în engleză:
Caşcaval (IPA: [kaʃ.ka'val]) is the traditional name for a specific ***semi-hard cheese made in Romania***, with sheep's or cow's-milk cheese. Several sorts of the Romanian caşcaval have PDO status in the E.U. It is quite similar to the Balkan, Greek and Sicilian Caciocavallo cheese, taking its name from the latter.
The term is often used by extension as a generic name for all ***semi-hard yellow cheeses*** such as the Swiss Emmental cheese, the Dutch gouda and the British Cheddar, or anything that looks similar to the caşcaval.
În germană există termenul Schnittkäse, care corespunde perfect caşcavalului de la noi:

Deci este o denumire generică, pentru brânză semi-tare (Halbhartkäse), în care sunt incluse diverse tipuri de astfel de brânzeturi, în primul rând Kaschkawal (engl. Kashkawal), dar şi alte sortimente asemănătoare acestuia.
Aşa, Schnittkäse înseamnă brânză feliabilă, deci care poate fi tăiată uşor în felii, însă nu există în engleză un termen exact care să traducă exact Schnittkäse; dicţionarele nu dau nimic; iar pe forumul de la LEO în comentariul 3 tot cam asta zice:
"We distinguish between soft and hard cheese, and then "semi-soft", "semi-hard" which is probably closest to Schnittkäse. But we don't have a name telling you if you can slice it or not, unless it is sliced."

Dar din ce zice şi Wikipedia, reiese că trebuie să fie semi-hard to hard brânza în cauză, ca să fie feliabilă, că altfel e sfărâmicioasă.
Oricum, sigur trebuie tradus tot printr-o denumire generică, fiindcă orice traducere printr-un anumit tip de caşcaval (Ceddar, Emmentaler, Gouda etc.) ar fi inexactă, fiindcă ar exclude alte tipuri de brânză, care la noi sunt considerate tot caşcavaluri. De asta până la urmă cred că tot Wikipedia îi zice cel mai corect: generic name for all ***semi-hard yellow cheeses*** such as the Swiss Emmental cheese, the Dutch gouda and the British Cheddar, or anything that looks similar to the caşcaval.

Swiss cheese is described as pale yellow in color with large, scattered holes, and having a slightly nutty flavor. The fermentation process causes gas to expand within the cheese, causing large bubbles which become holes.

: de acord cu Swiss cheese, dacă caşcavalul are găuri. Dacă nu are, poate fi Cheddar cheese sau caşcavalul olandez Gouda sau chiar acela sicilian Cacciocavallo, de unde i s-a preluat şi numele. Pt. Adina ar fi de ajutor o poză cu acest caşcaval.

99% din situaţiile în care se menţionează "cheese", este vorba de ceea ce noi, românii, numim caşcaval. În nici un caz atunci când spunem cheese nu este vorba de brânza specific românească. Deci eu aş lăsa simplu "cheese".
