It's an advertising campaign in restaurants.
They suggest a number of ways in which the product can be promoted, including:
'...posters en la entrada, mantelines y *caballetes* en las mesas'
I'm pretty sure they're talking about either a) those little (plastic) stands with suggestions, or b) (wooden) 'racks' again containing various cards/sheets of paper with different possibilities.
At the moment, I'm using 'display stands', but am not entirely convinced. Any suggestions?

A board display stand
you could leave it as display stand alone...but if you want to be more specific, the kind that looks like a caballete is called A stand because from the side it looks like a letter A. Below is a picture
