This is about an on-board catering service on a tourist train. I am not sure what means in this context. I thought it meant prepare, but then it says the food is already prepared. Thanks in advance for your suggestions!

Context:

Les produits de restauration devraient être régénérés à l’intérieur du train dans un espace dévolu, mais préparés en amont. Les produits du terroir seront mis en avant.

Hi!

Very interesting process, mainly because food is hard to eat long time after being prepared. The reference supplied by Monsieur Cyril Tollari seems enough to clear it. : )

I see your problem!
I'm pretty sure it means things like re-heating, unwrapping, portioning, etc.
This is a common requirement in catering: some outlets may prepare food for presentation, but are not allowed to cook from scratch.

Samuël has kindly provided a solid ref. for us in the 'Discussion' which confirms.
In view of the fact thet 'régénérer' is a technical term that avoid having to say 'reheated', it seems appropriate to employ an equivalent 'euphemism' in EN too!
Of course, in many cases, it will in any case mean 'thawed out to room temperature', in which no literal 'heating' is involved.

I sense the presence of micro-wave cooking here! The dishes are all pre-prepared, loaded onto the restaurant car and when ordered, heated up or "refreshed" in some other way. The train kitchen does not cook from raw ingredients.

neutral Tony M : I think as the term 'refreshed' has a specific technical meaning in cooking, it would be unwise to employ it here in a more general sense.

Food regeneration is a process whose purpose is to maintain the quality of the food, trying to bring frozen or packaged foods to the temperature of consumption.
"Refreshed" is not the same thing.
