Então, "kneading" seria o amassamento. Não consegui encontrar um termo equivalente em inglês para "empasto". Pensando na definição do Houaiss, "converter em pasta", acredito que empasto seria a adição de água à farinha. Mas, levando em conta o contexto dado, acredito que quer dizer botar o líquido E amassar. Então, concordo com a opção "kneading".
